We’re about to have our first menu testing. We’ve got a great menu designer (in the gastronomic sense, not the graphic sense) whipping up a bunch of sandwiches and a couple of salads for us to taste and critique. Just looking at this receipt makes me hungry. Click on that teensy little receipt over on the left for the full size image. Just try to read it without salivating.

Mmm…tasty! Though I do wonder about buying pesto and tapenade rather than making your own.
And of course “receipt” is an older form of the word “recipe,” which makes this doubly appropriate.
My one practical suggestion: just make sure not to use gummy bread for the sandwiches. You might think that this advice wouldn’t be needed, but it’s amazing how many otherwise good sandwiches places use bread that compresses into doughy clay and sticks to your teeth.

Oooh, I didn’t know that about receipt – cool!
There will be no gummy bread. No worries there. It’ll be artisan bread, and all sandwiches will be freshly made.
We may end up making our own sauces. Depends on the final menu and staffing. We won’t be doing any actual cooking – just prep, warming, and sandwich pressing.
